The Cellars at Jasper Hill is an innovative 22,000 square foot underground facility located in Greensboro, VT. – and Bayley Hazen Blue was one of the first cheeses made as the creamery got up and running in 2003. Based on a British natural rind blue, BayleyHazen evokes cozy vibes with its woodsy-looking rind and elegant pops of vibrant blue veining. Fudge-like in texture, the paste is a bit crumbly, as suggestions of mild spice arise in its creamy texture. Usual peppery characteristics of blue cheese are a bit subdued, elevating grassy, nutty flavors from the superb milk. Named after an old military road that winds through the Northeast Kingdom in VT, Bayley Hazen was awarded best raw milk cheese at the 2014 World Cheese Awards!
