In fact, the production of this vibrant recipe predates the Roman conquest of the Mediterranean island of Sardinia more than 2000 years ago. Made from fresh, raw milk from the Sardinian-breed sheep, an adaptable breed that can live in mountainous or lowland terrain, this cheese is aged about 8 months, turning the interior paste a golden color and giving it a deeper, super-rich flavor.
